Aluminum is the best heat conductor next to copper. It is widely used in bakeware because of its advantages: great conductivity, strength, and low cost. While this lightweight metal is highly resistant to corrosive materials like rust, contact with certain foods can cause oxidation and change the taste of your food. To prevent oxidation a stainless steel or anodized coating is often applied to the aluminum so that no matter what you bake, every meal is as good as your last!
