Most ceramic bakeware can be used in both regular and microwave ovens. This offers greater flexibility as metal pans should not be used in a microwave oven. Ceramic bakeware is also relatively inexpensive and glazed ceramic cookware is nonstick. Unglazed ceramics, such as terra cotta, have a porous surface that can hold water or other liquids during the baking process, adding moisture in the form of steam to the food.
